MOONG DHAL KHEER/PAYASAM

Ingredients

Moong Dhal-1 cup
Jaggery-1 cup
Cardamom -2 ea
Milk-1 cup
Ghee-1Tbsp
Cashew nuts-3 tbsp

Method

Heat kadai, dry roast the moong dhal until nice aroma comes.
Add to the pressure cook with milk , cardamom powder & water.
Cook upto 1-2 whistle & cool it down .
Add jaggery & allow to boil until all mixs togather.
heat ghee in a pan, add cashew nuts & fry until golden brown.
Add to payasam & Serve hot or cold.

BABY POTATO CURRY

BABY POTATO CURRY


Ingredients

Baby potato- 20-25 ea
Tomato-2 ea(finely chopped)
Grated ginger-2 tsp
Red chilli powder-2 tsp
Cumin seed-1 tsp
Mustard seed-1 tsp
Oil-2 tsp

Method

Pressure cook the potato upto 1-2 whistle.
Allow to cool & deskin.




Add oil in a pan, add cumin seed,mustard seed, grated ginger, chopped tomato & saute few mins.



Add red chilli powder, boiled potato & mix well.

Check the seasoning & Serve hot with rice or roti.

IDLY MANCHURIAN

Ingredients

Onion-1 ea(chopped)
Garlic-2 tsp(chopped)
Ginger-2 tsp(chopped)
Tomato puree-2 tbsp
Red chilli sauce-1 tbsp
Soya sauce-2 tbsp
Green chilles-2 (slit)
Spring onion-3 tbsp(chopped)
Cilantro- for garnishing
Oil- for frying

Method

Cut the idlies into small pieces & deep fry in oil.
Heat oil in a pan, add garlic, ginger,g.chillies,onion & saute few mins.
Add all sauces & fried idly .
Garnish with spring onion, cilantro & serve hot.

SMALL POTATO PULAO


I got this idea from Mrs. Mallika Badrinath's book " 100 varieties of rice".I just changed it to my way by changing the method.

Ingredients

Small potatoes-20-25ea
Onion-2 ea (sliced)
Cumin seed-1 tsp
Cloves-4 ea
Cardamom-2-4 ea
Bay leaves-3-4 ea
Oil-1 tbsp
Tomato puree-1 cup ( I used fresh tomato juice)
Turmeric powder-2 tsp
Yoghurt-1 cup
Cilantro-1 bunch
Basmati rice-2 cup (soaked min 15-30mins)
Turmeric powder-1 tsp

To grind

Coriander seed-2 tsp
Red chilles-3 ea (acc to taste)
G.chilles-2 ea (Acc to taste)
Ginger-2”
Cloves- 4 pod
Grated coconut-3-4 tbsp

Method
  • Boil the potatoes & remove skin.
  • Spike with a fork & deep fry until golden brown.
  • Boil the rice with tomato puree, turmeric powder,salt & keep it aside.
  • Grind fresh cilantro to a fine paste & add to the yoghurt.
  • Heat oil in a pan, add cumin seeds, cloves,bay leaves,cardamom,sliced onion & sauté few mins.
  • Add ground masala paste,yoghut mix & fried potatoes.
  • Cook until all raw flovours extracts & add cooked rice & mix well.
  • Serve hot with raithas.

GRILLED CORN & AN AWARDS

Ingredients

Sweet Corn-2 ea
Lemom-1ea
Red chilli powder-1 tsp
Salt- to taste

Method

Plain grill the corn without any seasoning.
Once coloured evenly serve hot with red chilli powder, salt & lemon piece.
Rub the corn with lemon, chilli & salt powder.
Serve with hot tea.

VEGETABLE RAWA IDLY

Ingredients

Rawa(semolina)- 2 cups
Yoghurt- 1 cup
Carrot- 1 ea (Finely cubed)
Peas-1/2 cup(I uesd frozen)
Beans- 10 ea(Finely chopped)
Red capsicum-1 ea(Fnely cubed)
Tomato -1 (Round silces)
G.chillies- 1 or 2 ea( finely chopped)
Ginger- 1 tsp ( grated)
Turmeric powder- 1/2 tsp
Mustard seed- 1 tsp
Salt- 1 tsp
ENO salt- 2 tsp
Oil- 2 tbsp
Grated coconut-2 tbsp(for garnishing)
Cilantro- for garnishing

Method

Take a big bowl add rawa , 2 tbsp oil & mix well.
Add yoghurt , all the vegetables,turmeric powder & mix well.
Add water & make a mild thick batter.
Add in the ENO salt & Mix well which helps in raising the batter when it is rested.
Heat oil in a pan,Temper with mustard seed, chopped green chillies, grated ginger & add to the batter.
Grease oil in a idly plate, arrange the tomato & add the idly mix.
Pressure cook (with out using whistle) for around 6- 7 mins.
Garnish with coconut & cilantro & Serve with any kind of chutneys.

MASALA VADA (AMA VADAI)


MASALA VADA (AMA VADAI)

Ingredients

Splitted channa dhal-2 cups(soaked min 1-2 hours)
Whole red chillies-4-6(to taste)
Ginger-2 "
Garlic-4 pods
Onion-1 ea(finely chopped)
Fennal seed-2 tsp
Salt- to taste
Curry leaves-1-2 sprig
Oil- for frying
Method
Take one handful soaked channa dhal keep it aside.
Blend all ingredients coursely (except onion,curry leaves).


Add the curry leaves,onion & soaked whole channa dhal .
Make a ball and flatten it & Deep fry in oil until golden brown.


(we can make this vada without garlic ,onion & fennal seed as prasadam for function.)

THENGAI THOGAYAL (COCONUT RICE MIX)


Thengai thogayal is a great rice mix in Tamilnadu. Mor kuzhambu is a great combination with this rice.
Ingredients
Coconut-2 cups(grated)
Red chillies-3 es(acc to taste)
Urad dhal-1 tbsp
Tamarind-very small quantity
Salt- to taste
Oil-1 tsp+1tsp
Mustard seed-1 tsp

Method

Heat oil in a pan, add urad dhal,red chilles & roast few mins .
Mix the roasted urad dhal, red chillies & rest of the ingredients & blend to a semi- solid mix.
Heat oil in a pan add mustard seed & allow to temper & add to blended mix.
Hot rice goes well with this.

BAUGETTE TITBITS

Ingredients

Baugette-1 ea
Onion-1 ea(finely chopped)
Tomato-1 ea(finely chopped)
Capsicum-1 ea(finely cubed)
Cilantro-1 tbsp(finely chopped)
Salt - to taste
Pepper powder-to taste
Lemon juice-2 tbsp
Butter or olive spread-2 tbsp
Ceddar cheese-as ur taste

Method

Mix all vegetables along with salt,pepper &lemon juice.
Cut the baugette ,apply butter & put the veg salsa mix &cheese.
(Half freeze the baugette before serving so that it is easy to cut into the required shape.
Slice it slantly so that they are of equal slice.)
Grill it or toast it one side so that it is hard.
This can be served on small get togethers & parties.
