KATHAMBA SAMBAR- MULTI VEG SAMBAR- MIXED VEG KUZHAMBU- கதம்ப சாம்பார்


KATHAMBA SAMBAR- This sambar is made with lots of vegetables.I used only a few vegetables, but we can make with any kind of vegetables.The taste is also really good & delicious.

Ingredients

Onion-1 no
Tomato- 1 no
Ladies Finger/okra- 3 no
Brinjal-1 no
Drumstick -1 no
Radish-1/4 cup(sliced)
Potato-1 no(peeled & chopped)
Carrot-1/4 (chopped)
Green chillies-1 or 2
Sambar powder- 2 tbsp
Tamarind- small lemon size
Cooked Tuvar dal-2 cups
Oil-2 tbsp
Mustard seed- 1 tsp
Fenugreek seed- 1 tsp
Channa dal-1 tsp
Curry leaves-1 sprig
Coriander leaves- 2 tbsp ( Garnishing)

Method

Heat oil in a pan, mustard seed, fenugreek seed, channa dal & allow to temper.
Add chopped onion, green chillies & sauté  few seconds.
Add all vegetables, salt & mix well.
Cover the lid & simmer for 3-4 mins. 
Soak the tamarind in warm water & squeeze the juice from it to make around 4 cups.
Add tamarind juice, sambar power, hing & allow to boil.
Check the seasoning & allow to boil until all veggies are cook well.
 Add cooked tuvar dal &mix well.
Garnish with curry leaves & coriander leaves & mix well.
Serve hot with rice.

CARROT CORIANDER PARATHA - CARROT CORIANDER ROTI

I love all type of Paratha.  Adding vegetables are more healthier than plain paratha.I made this paratha for my Sweety daughter. she loves chappathi but not veggie.So i prepared carrot coriander paratha for her. She loved it.

Ingredients

Wheat flour- 3 cups
Grated carrot- 1 cup
Chopped coriander leaves-1/2 cup
Red chilli powder-1 tsp
Turmeric powder-1/4 tsp
Crushed ajwain seed- 1/2 tsp
Oil- 1 tsp

Method

Mix all ingredients with little water & make a soft dough.
Rest the dough min 10 mins.



Heat the tawa, take a small portion of dough & dust it.
Flatten it using rolling pin & cook both sides until golden brown.


Brush with little oil.
Serve hot with Raitha or Any Subzi.

KEERAI VADAI-- கீரை வடை
kEERAI VADAI- this is a Famous snack in South India . It is perfect for evening snack with Hot tea.

Ingredients

Moolaikeerai-1 bunch
Urad dal-2 cups (soaked)
Green chillies-3 no
Salt- To taste
Oil- for frying

Method
Clean and wash Keerai & shred it finely
Grind the urad dal to a fine paste.


Take a bowl add ground urad dal,shredded keerai,geen chilles, salt & mix well.
Heat oil in a pan, make vadai & deep fry it both sides.


Serve with chutneys.

POOSANIKKAI KOOTU- WHITE PUMPKIN SABZI


Ingredients

White Pumpkin- 1 no
Cooked moong dal-1 cup
Coconut grated -3 tbsp
Red chillies-1 or 2
Cumin seed-1 tsp
Oil-2 tsp
Mustard seed-1 tsp
Urad dal-1 tsp

Method

Deskin the pumpkin & cut in to small pieces.
Allow to boil with little water.


Add cooked moong dal & salt.


Grind coconut,cumin seed, red chillies  to a course paste.


Add to the kootu & allow to boil.
Heat oil in a pan, add mustard seed,urad dhal & allow to temper & add to the kootu. Simmer gently.


Serve hot with rice.

TOMATO MOZZRELLA CHEESE SALAD - ITALIAN SALAD- It is simple salad & Easy to make.One of the greatest Italian starter & can be eaten all four seasons. Ingredients

Cherry tomatoes- 100 gms
Bocconcini (little mozzarella cheese) - 100gms
Olive oil-1 tsp
Crushed pepper-a pinch
Sea salt- a pinch

Method

Cut the cherry tomatoes into half.
Half the bocconcini cheese as well.



Take a bowl add tomatoes, cheese ,crushed pepper & salt.
Mix well.

Can also be dressed with Pesto or basil oil.

PALAK PARATHA- PALAK ROTI- SPINACH FLAT BREAD
Ingredients

Palak (spinach )-1 bunch
Wheat flour-2 cups
Salt- to taste
oil- 2 tbsp

Method

Boil the water in a pan, add palak & allow to boil 3 mins & drain it .
Allow it to cool & squeeze the excess water & grind to a fine puree.



Take a bowl Add wheat flour, salt, ground  spinach & mix well.


Add little water & make a soft dough. Allow to rest minimum 20 mins .



Make the small balls  in a dough, dust the flour.
Using rolling pin, flatten it &  heat the tawa, cook it both sides brushing with oil.
Serve hot with any Subzi.

Wheat flour Appam- This is very easy to make & very tasty recipe . Normally we make this appam for festivals like Ganesh Chaturthi, Karthigai Deepam, Krishna Jayanthi & Sumangali Poojai.

Ingredients

Wheat flour-1 cup
Banana (ripe)- 1 no
Jaggery-1/2 cup
Cardamam powder-a pinch
Oil- for frying

Method

Take a bowl add wheat flour, grated jaggery, banana, cardamom powder , little water & mix well.



The batter should not be neither too thick nor too thin.
Heat oil in a pan, add small laddle of flour in it & fry  both side until golden brown..

Ellu sadham- Sesame seed rice - This is a very tasty and flavourful rice. Normally we make this  rice on Saturday for God saneeshwara as prasadhams.

BLACK SESAME SEED RICE- ELLU SADHAM -

Ingredients

Black sesame seed-2 tbsp
Urad dhal- 1 tbsp
Red chillies-2 no ( acc to taste )
Salt-t to taste
Oil-1 tbsp
Mustard seed-1 tsp
Curry leaves-1 sprig
Cooked rice-3 cups

Method
Dry roast the sesame seed & keep it aside.



Dry roast the urad dhal & red chillies.
Grind urad dhal & red chillies as course powder & add  roasted sesame seed ,salt & blend to make a fine powder.

Heat oil in a pan add mustard seed,curry leaves & allow to temper.



Add cooked rice &blended sesame seed powder, mix well.

World Diabetes Day, on the 14th November every year, has grown from humble beginnings to become a globally-celebrated event to increase awareness about diabetes.

Diabetes mellitus, or simply diabetes, is a group of metabolic diseases in which a person has high blood sugar, either because the pancreas does not produce enough insulin, or because cells do not respond to the insulin that is produced.Awareness is most common fact to reduce or e free from this chronic disease. There are a couple of things to take into account.Try to avoid sugar as far as possible or any sugary edibles.Try a low carb diet and last but not least having a high protein fibre diet.



So today's post is related to it.

Banana stem is a rich source of fibre . Its high fibre content creates a feeling of satiation and hence, reduces the intake of food. It also helps ease constipation. Banana stem is rich in potassium and vitamin B6 just like the fruit. Vitamin B6 helps in production of haemoglobin and insulin.

Ingredients

Banana stem- 1 no
Moong dal-5 tbsp ( soaked min 30 mins)
Salt- to taste
Coconut- grated 3 tbsp
Lemon Juice-2 tsp
Mustard seed-1 tsp
Curry leaves- 1 sprig
Oil-1 tsp

Method

Deskin the banana stem & chop it.

Take a bowl add 3 cups of water & add little buttermilk or yohurt.


Add the chopped banana stem in buttermilk mix and soak. It avoids discolouring in banana stem.
Strain the banana stem & add to a bowl.


Add soaked & strained Moong dal , grated coconut.
Heat oil in a pan, add mustard seed, curry leaves  & allow to temper  & add to the salad.
Squeeze the lemon juice & mix well.

PALAK CORN SUBZI- SPINACH SWEET CORN MASALA

Palak Corn Subzi/Masala- This is one of my favourite side dish.The blend of palak and Sweet corn is an awesome combination . Weekly once and twice I always make palak dishes like Palak Paneer, Palak Aloo, Palak Channa, Palak Poori , Palak Paratha & Palak corn Subzi.

Ingredients

Palak(spinach)- 2 bunches
Sweet corn - 2 cups( i used frozen)
Onion-1 no ( finely chopped)
Ginger garlic paste-1 tsp
oil-1 tbsp
Cumin seed-1 tsp
Nutmeg- a pinch
Salt- to taste.

Method

Blanch the palak,drain & cool it. Squeeze the water completely & blend it to a fine purée


Heat oil in a add cumin seed, onion , ginger garlic paste & sauté.


Add ground paste  & nutmeg powder.
Mix well & allow to simmer.


Add sweet corn, salt & mix well.
Cook it with simmer & serve with roti or rice.

RADISH SAMBAR- MULLANGI SAMBAR
I love radish sambar with shallots. Every time when my mom makes it those are finger licking moments. Now i am missing my mom's cooking. I used red radish . we can use any radish, white one or red radish.we can use this sambar with hot rice or  side dish of idly, dosa or appam.

Ingredients

Shallots- 1/2 cups
Radish-1 cup (sliced)
Sambar Powder- 2tbsp
Salt- to taste
Mustard seed-1tsp
Fenugreek seed-1 tsp
Channa dal-1 tsp
Coconut - 2 tbsp
Oil-1 tbsp
Tamarind - small lemon size
Tuvar dhal- 1 cup ( cooked)

Method
Soak the tamarind in water & squeeze it.
Heat oil in a pan , add mustard seed, fenugreek seed, channa dal & allow to temper.
Add shallots & sauté few seconds & add sliced radish .


Add tamarind water, sambar powder, salt & allow to boil.



Grind the coconut to the course paste.
Allow the tamarind broth  to simmer until radish cooks well.
Add ground coconut paste & mix well.


Add cooked tuvar dhal & mix well.
Finish with cilantro & serve hot with rice and ghee.

RAW PLANTAIN CURRY- VAZHAKKAI FRY- VAZHAKKAI PORIYAL
Vazhakkai fry- It is very simple and tasty recipe.Easy to make. this is best combination of sambar with hot plain rice.
Ingredients

Plantain- 2 no
Mustard seed-1 tsp
Urad dhal- 1 tsp
Sambar powder-2 tsp ( acc to taste)
Salt- to taste
Hing- a pinch
Oil- 2 tbsp

Method
Peel the plantain, slice it & soak it in cold water.

Heat oil in a pan, add mustard seed,urad dal & allow to temper.

Add sliced plantain & mix well.
Add sambar powder,salt & mix well.

Allow to simmer until cook.
Serve hot with rice & sambar.

VELLA SADHAM- SWEET RICE- JAGGERY RICE

Vella sadham- this sweet rice is  made with jaggery. This easy to make and tastes similar to  sakkarai pongal. Normally my mom makes this rice on Adi perukku day and Navrathiri days.I love this very much becoz of the taste of jaggery and coconut.

Vella Sadham- Jaggery rice

Ingredients

Cooked Rice- 2 cups
Jaggery -1 cup
Coconut-1/2 cup (grated)
Cardamom powder-a pinch
Ghee- 2 tbsp
Cashew nuts-2 tbsp

Method

Heat the jaggery with water & strain it.
Again allow to boil, add grated coconut & mix well.
Add cooked rice,  Mix well & allow to cook in medium flame.
Add cardamom powder & mix well.
Heat ghee in a pan add cashew nuts & allow to roast .
Add to the rice & mix well.
