This is a famous dish from southern India especially Tamilnadu & Kerala.Normally best accompanied with Idiyappam & Appam. We love the coconut flavour.Normally cardamom ,Cloves,bay leaves are added in the stew, which strongly dominates the coconut flavour that is why I avoided using spices. If you like masala flavours, add along with cumin seed.
G.chillies-2 no(acc to taste)
Salt- to taste
Cumin seed-1 tsp
Take a blender add coconut,little water & grind well.
Heat oil in a pan, add cumin seed & allow to temper.
Add greenchillies,chopped ginger, sliced onion & sauté until translucent.
Add all vegetables,salt & thin coconut milk & allow to cook until done.
check the vegetables & cooked well, add first coconut milk & allow to simmer upto 3 mins.
Serve hot with Idiyappam or Appam.
