PINEAPPLE KESARI - SEMOLINA PINEAPPLE PUDDING

Rava Kesari  is a famous & tasty dessert dish.This can be prasad (neiveidhyam) for god.Adding Pineapple makes it more delicious. My hubby Likes vermicile kesari. After trying this pineapple kesari, he liked it very much,Now a days i am making this kesari very often.

Ingredients

Rava/sooji/semolina-1 cup
Sugar-2 cups
Pineapple- 1 cup( finely chopped)
Cashew-2 tbsp
Raisins- 1 tbsp
Ghee-1/2cup
Lemon yellow colour-1/8tsp
Cardamom -2 no

Method
Deskin the pineapple & cut in to small pieces.
Heat 2 tsp ghee & roast the cashew ,raisins & keep it aside.In the same pan, roast the pineapple & keep it aside.
Heat 2 tbsp ghee & roast the rava until nice aroma comes.
 Add the boiling water & allow to cook until soft.
 Add sugar,lemon yellow colour & mix well.
 Cook until sugar melts & add pineapples,cashew & raisins.
Serve hot or cold.
