SABUDANA VADA- SAGO VADA- TAPIOCA FRITTERS -JAVVARASI VADAI

Ingredients

Sago/sabudana-1 cup (soaked)
Potato-1 no (boiled)
Green chillies-2 no (chopped)
Cilantro-3 tbsp(chopped)
Ginger-1 tsp(chopped)
peanut-3 tbsp (coarsely powdered)
Oil- for frying
Salt- to taste

Method

Soak the sogo minimum 2-3 hours & drain it.
Take a bowl add soaked sago, mashed potato, cilantro. chopped chilles,ginger ,salt & crushed peanut.
Mix well & make a small flatten it to shape it as vadais.
Heat oil in a pan,
Deep fry the vadais on both sides & serve hot with chutneys.

ALOO GOPI CURRY- SIMPLE POTATO CAULIFLOWER CURRY/PORIYAL
Aloo gopi curry- This is very tasty & easy to make . we love this curry especially my hubby. I learnt this recipe from MIL.i used peeled potatoes, Becoz my daughter doesn't like skin. You may use with with skin as well.

Ingredients
Potato-3 no medium
Cauliflower- 2 cups (florets)
Sambar powder-1 tbsp 
Salt- to taste
Hing- a pinch
Mustard seed-1 tsp
Urad dal-2 tsp
Curry leaves-2 sprig
Oil-2 tbsp

Method
Heat oil in a pan, add mustard seed, urad dal, curry leaves & allow to temper.
Add peeled & chopped potatoes & mix well.
Add sambar powder,salt,hing & mix well.
Cover the lid & cook it until the potatoes are almost done.
Add cauliflower florets, turn the heat off and leave to rest.
Serve with rice or roti.

Simla mirchi ka Raitha- It is a very tasty Raitha & best accompanied with any kind of paratha or Biryani.

Ingredients

Yellow pepper- 2 tbsp ( chopped)
Red cpepper-2 tbsp (chopped)
Green chillies- 1 no ( chopped)
Onion-2 tbsp (chopped)
Cilantro-1 tbsp ( chopped)
Yoghurt-1 cup
Oil- 1 tsp
Mustard seed- 1/2 tsp
Salt- to taste
Method
Take a bowl ,add chopped peppers, cilantro,onion, chillies & salt.
Add yoghurt & mix well.
Heat oil in pan, add mustard seed & allow to tempering & add to the Raitha.

MASALA PANIYARAM- VEG PANIYARAM


Normally I make Uthappam from leftover Idly batter. It is a  very authentic recipe.I am a fan of Kuzhi Paniyaram  &Appam at Grand sweets,Chennai. This is one of the common snack item during tea . It goes very well with gun powder and authentic chutneys.

Ingredients
Idly Batter- 4 cups
Onion- 1 medium (finally chopped)
Red pepper - 2 tbsp (chopped)
Yellow pepper-2 tbsp(chopped)
Carrot-1 no ( grated)
Ginger- 1/2 tsp (grated)
Green chilles-1 no ( finally chopped)
Coriander leaves- 2 tbsp ( chopped)
Salt- to taste

Method
Take a bowl add all vegetables, idly batter & mix well.
Heat the paniyaram pan & add little oil in it.
Add the dough mix & allow to cook & turn it around to cook other side as well.
Serve hot with Sambar or Chutney.

ONION PICKLE- VENGAYA THOKKU- ULLI THOKKU
Onion thokku- My favourite thokku. It is an 'All in one' thokku. This is best side dish for Roti , poori, Dosa, Idly, Plain Rice,Curd rice,etc.It is easy to make & can be kept in the fridge for  more than 10 days.

Ingredients
Shallots- 150 gms ( peeled)
Garlic- 1 whole 
Red chillies- 7-8 nos
Salt- to taste
Tamarind- goose bury size
Sesame oil- 4 tbsp
Mustard seed- 1 tsp
Method
Take a blender, add tamarind, red chillies ,garlic,salt & make a course paste.
Add shallots & continue blending to make a fine paste. Add water If needed  while blending.
Heat oil in a pan, add mustard seed & allow to temper.
Add ground paste & mix well.
Cook until all raw flavours extracts & oil comes out.
Serve with plain rice, roti, poori, paratha ,etc.
