PINEAPPLE KESARI - SEMOLINA PINEAPPLE PUDDING

Rava Kesari  is a famous & tasty dessert dish.This can be prasad (neiveidhyam) for god.Adding Pineapple makes it more delicious. My hubby Likes vermicile kesari. After trying this pineapple kesari, he liked it very much,Now a days i am making this kesari very often.

Ingredients

Rava/sooji/semolina-1 cup
Sugar-2 cups
Pineapple- 1 cup( finely chopped)
Cashew-2 tbsp
Raisins- 1 tbsp
Ghee-1/2cup
Lemon yellow colour-1/8tsp
Cardamom -2 no

Method
Deskin the pineapple & cut in to small pieces.
Heat 2 tsp ghee & roast the cashew ,raisins & keep it aside.In the same pan, roast the pineapple & keep it aside.
Heat 2 tbsp ghee & roast the rava until nice aroma comes.
 Add the boiling water & allow to cook until soft.
 Add sugar,lemon yellow colour & mix well.
 Cook until sugar melts & add pineapples,cashew & raisins.
Serve hot or cold.

POONDU KUZHAMBU-GARLIC KUZHAMBU-பூண்டு குழம்பு

Poondu Kuzhambu- Kuzhambu is one of the best dish from Southern India. This has a very tangy taste with garlicky flavour. Sambar or kuzhambu are one of the main dish in everyday palate. The difference between the sambar and Kuzhambu is adding cooked dal in sambar, whereas in Kuzhambu we don't add any cooked dal. We can keep it in fridge for a week.Normally i am make this kuzhambu once or twice in a month. My hubby is great fan of Kuzhambu like Vathal Kuzhambu. Kara Kuzhambu, Peanut Kuzhambu & Ennai kathirikkai Kuzhambu.

Ingredients

Garlic- 2 whole pods
Red chillies- 2 no
Sambar powder- 2 tbsp
Fenugreek seed-1 tsp
Channa dal-2 tsp
Mustard seed- 2 tsp
Sesame Oil-3 tbsp
Tomato-2 nos
Tamarind- small lemon size

Method
Soak the tamarind in warm water & squeeze the juice from it around 3-4 cups.
Chop the tomatoes & grind to a paste.
Heat sesame oil in a pan, add mustard seed, fenugreek seed,channa dal. red chillies & allow to temper.
Add peeled garlic & allow to sauté up to 2-3 mins.
Meanwhile add sambar powder,ground tomatoes ,salt in squeezed tamarind water.
Once the garlic is sautéed & tamarind mixed water . Allow to boil. 
Allow to cook until oil floats out.
Serve with plain rice , papad & ghee.

DAL TADKA- DAL FRY RECIPE

Dal Tadka- It is a famous dal recipe . Its very tasty & healthy recipe. It is accompanied  with rice & roti.I used tuvar dal & masoor dal. we can use any kind of mixed dals like moong dal, channa dal. I am big fan of all dals like Tuvar dal, Tomato moong dal, Methi dals, Dal Makhani .

Ingredients 

Tuvar dal- 1 cup
Masoor dal-1 cup
Onion- 2 no(chopped)
Tomato-2 no (chopped)
Ginger-2 tsp
Garlic- 2 tsp
G.chilles-2 no
Curry leaves-1 sprig
Coriander leaves-2 tbsp
Cumin seed-1 tsp
Red chillies-2 no
Oil-2 tbsp+1 tbsp
Ghee-1tbsp

Method

Heat oil in a pressure cooker or pan, add cumin seed & allow to temper.
Add chopped onion,tomatoes,g.chilles  & sauté.Add washed dals, turmeric powder,salt & mix well.
Add 4-5 cups of water & allow to cook 3-4 whistle on pressure cooker.
Heat oil + ghee in a pan, add mustard seed, cumin seed, whole red chilles, chopped garlic,curry leaves & allow to temper & add to the dal.

METHI MUTTER MALAI RECIPE


Methi Mutter Malai- This is one of the famous dish of North India. The combination of fenugreek leaves & Green peas cooked together with cream. I always wonder how could this combo of methi in this gravy tastes? I tasted this recipe in Restaurant which my hubby ordered. Finally I tried this recipe, Wow It was Amazing & Very tasty. Now a days I am make this once a week.

Ingredients

Fenugreek leaves- 1 bunch
Green Peas=1 cup ( I used frozen)
Onion- 1 no (chopped)
Tomato-1 no (chopped)
Green chilles-2 no
Ginger-1 tsp
Garlic- 2 tsp
Fresh cream-100 ml
Garam masala-1 tsp
Salt- to taste
Oil- 1 tbsp+ 1 tbsp
Cumin seed-1tsp

Method
Heat oil in a pan, add ginger,garlic,chillies, onion , tomato & allow to sweat.
Make it cool & grind a fine paste.
 Heat oil in a pan, add cumin seed  & allow to temper. Add washed & chopped Fenugreek leaves & sauté.
 Add green peas & sprinkle of water & cook until soft.Add ground onion tomato paste & mix well.
 Add garam masala & mix well. Add fresh cream & allow to boil .
Serve hot with roti or Rice.
