TOMATO MOZZARELLA BAGUETTE RECIPE
This is one of the best dishes I love to make & have it any time during the day.It is an amazing grub and in way it can be a salad/ Sandwich. These are prime ingredients mainly from Italy. Mozzarella & tomato are a great combination ,very summery.

INGREDIENTS

French baguette - 1 no
Red pesto - 1 tsp
Green pesto - 1 tsp
red onions - 1 ea (thinly sliced)
Iceberg lettuce - 1/4 ea (shredded)
cucumber - 1/4  (sliced)
buffalo mozzarella - 1no (sliced)
tomato - 1 no (sliced)
Seasoning - to taste

METHOD
I used French baguette. Slit the bread in the middle & toast it. Brush it with a mix of red & green pesto.


Top it with thinly sliced red onions and iceberg lettuce.
Top it again with sliced cucumber,tomato & buffalo mozarella. Season with salt & pepper.
Finish the sandwich by placing the other half of the baguette & serve.

ONION RAITHA - VENGAYA PACHADI

One of the favourite accompaniments for Biryani. Actually there are quiet a variety and can be done with cucumber, tomato, boondi & even bhindi. It all depends on the type of yoghurt used & also the type of vegetables used. In Persian cuisine its called Tzatsiki where a little bit of raw garlic is used with Mint & cucumber to give more flavour. 

Ingredients

Yohurt-2 cups

Onion- 1 no ( finelly chopped)
Coriander leaves-2 tsp (chopped)
Red chilli powder- 1/2 tsp
Cumin powder- a pinch
Salt- to taste
Oil-1 tsp
Mustard seed-1/2 tsp

Method


Take a bowl add yohurt,red chilli powder, Cumin powder, salt, chopped onion, coriander leaves & mix well.

Temper with mustard & add to the raitha.
Serve with Biryani, pulao or roti.

I am a big fan of potatoes. This baby potato kurma has a  tangy savoury taste & best side dish for all types of roti. Ideally this can be done with normal potatoes but cooked & peeled new potatoes give great flavour & amazing look. It can be good for rice dishes.

Ingredients

Baby potatoes-500gms
Onion-2no (sliced)
Tomato-3 no (chopped)
Turmeric powder-1/2tsp
Red chilli powder-2 tsp( I used kashmiri chilli)
Oil-4 tbsp
Cardamom-2no
Clove-2 no
Bay leaves-2 no

Paste1

ginger-25gm
Garlic-10 cloves
G.chillies-2 no(Acc to taste)
Fennel seed-2 tsp

Paste 2

Coconut-4 tbsp
Poppy seed-1 tbsp(soaked)

Method

Boil the potatoes & deskin it.
 Heat oil in a pan, add cardamom,cloves,bay leaves & allow to sauté & add sliced onions.
 Add the paste 1, redchilli power, turmeric powder & mix well.

 Add chopped tomatoes & Mix well. Add water & allow to boil.
 Add boiled potatoes & mix well.
Add paste 2 & mix well. Garnish with Cilantro.

PENNE WITH BROCCOLI PESTO -EASY PASTA RECIPES-KIDS PASTA RECIPES
Pasta is a best snack or meal & ideal for any occasion. It is also children friendly & all kids love it. It is a great meal if done properly. My daughter loves the pasta especially the one with home made pesto. Normally pesto is made with pine nuts but can be done without it as well.

Ingredients

Broccoli- 100gms
Basil leaves-1/2 bunch
Garlic-2 cloves
Parmesan cheese-2tbsp+ Garnishing
Penne pasta-175 gms
Olive oil-5 tbsp
Salt- to taste
Pepper-a pinch cracked

Method

Blanch broccoli in salted boiling water & cool it. Pick basil leaves & add it with the cooked broccoli and blitz in a blender. 
Add in garlic, salt, olive oil & parmesan cheese to make a paste.


Boil penne in salted boiling water. Would be better if you can use the same water used for blanching the broccoli for added flavour.Once the penne is cooked grain & drizzle with oil to avoid sticking.

In a hot pan add in olive oil. Add in the chopped garlic & toss the penne with it. Add in the pesto paste and mix thoroughly to get a even coating on the pasta.
Serve hot with cracked black pepper,grated parmesan & shredded basil.
