TOMATO GINGER CHUTNEY- NO ONION NO GARLIC RECIPE
Tomato ginger chutney is tasty chutney & best combination of Idly & Dosa. Making this chutney without onion is good for some fasting days (fasting days garlic and onion is not allowed). Tomatoes tangy taste with ginger flavour is best of this chutney.I always prefer this chutney with hot Idly only.

Ingredients

Tomato-4 Large
Ginger-2 tbsp (roughly chopped)
Urad dal-1 tbsp
Whole red chillies- 4 no ( acc to taste)
Oil-1 tbsp +2 tsp
Mustard seed-1 tsp
Curry leaves-1 sprig

Method
Heat one tbsp oil, add urad dal, whole red chillies & allow to saute.

Add chopped tomatoes, ginger & allow to cook until it cooks well.
Allow it to cool & grind it to a fine paste. Heat 2 tsp oil add mustard seed & allow to temper, add curry leaves & add to this chutney.
Serve with Hot dosa, idly or roti.

CABBAGE KOOTU WITH MOONG DHAL
Cabbage kootu  is one of the best kootu in southern part of india. This is very healthy dish . Adding moong dal is good source of protein.Moong dal and coconut is the main part of kootu.

Ingredients

White cabbage-2 cups (chopped)
Yellow moong dal- 1/2 cup
Salt- to taste
Grated coconut- 3 tbsp
cumin seed-1/4 tsp
G.chillies- 2 no (acc to taste)
Oil-2 tsp
Mustard seed-1/2 tsp
Channa dal-1/2 tsp

Method

Take a pressure cooker or pan add chopped cabbage, moong dal, salt, water  & allow to cook 1-2 whistle.
Grind a course paste with coconut, cumin seed, g. chillies .Once the pressure comes down in cooker, add the course paste & mix well.
Allow to cook in simmer & Heat oil in a pan, add mustard seed, channa dal & allow to temper and add to the kootu.If you like hing flavour, you can add in it.

KALYANA GOSTHU- VEG GOSTHU- SIDE DISH FOR IDLY,DOSA & PONGAL
This Kalyana gosthu/ Veg gosthu - Kalyanam means Marriage. So This Gosthu is one of important side dish for every day breakfast during the Marriage. This is great combination for pongal and Idly. The Brinjal Gosthu is also called Chidambaram Gosthu which the best side dish of breakfast recipes. Tuvar Dal is also added instead of Moong dal.The specialist in this recipes is Gosthu Powder.It is one of the main masala in my kitchen, while making any sambar recipes, I add little powder & it adds a special aroma & flavour.

Ingredients

Onion-1 no
Tomato-1 no
Potato-1 no
Carrot-1no
Beans- 10 no
Brinjal- 2 no
G.chillies- 2no
Sambar powder-1 tbsp
Turmeric powder-1/4 tsp
Tamarind -small lemon size
Cooked moong dal-2 cups
Oil-1 tbsp
Mustard seed-1 tsp
Fenugreek seed-1 tsp
Channa dal-1 tsp
Curry leaves-1 sprig

For Gosthu podi

Coriander seed-1 tbsp
Channa dal-2 tsp
Red chillies-2 no
Pepper corn-1 tsp
Curry leaves-1 sprig
Coconut-1 tbsp
Oil-1 tsp(for frying)

Method

Heat oil in a pan, add mustard seed, fenugreek seed,channa dal & allow to temper. Add curry leaves, G.chillies, onion & saut'e.Add chopped tomatoes & mix well.
Add chopped potatoes, carrot, beans & cook 5- 6 mins,Add chopped brinjal & mix well.
Soak the tamarind & squeeze the juice from it around 3 cups. Add the tamarind juice , sambar powder, salt & allow to boil.
In the meanwhile , add oil in a pan, add all ingredients in the above list " Gosthu powder " & roast it and grind a coarse powder.
Add the gosthu powder & cooked moong dal & allow to simmer.
Finish with cilantro. This is best combination of Pongal, Idly , Dosa & Upma.
